This wine is nothing but rare, pure, clean and fresh. Marsanne is extremely rare in Western Australia. It is a Côtes du Rhône variety. Hand picked and selected from the Churchview certified organic vineyard, the fruit is then hand loaded into a de-stemmer and crushed. The must is then transferred into a static stainless steel fermentation tank where it is allowed to undergo a wild fermentation. At a critical stage the fermentation process is stopped by chilling the wine to minus 2 degrees in the tank. The wine is then allowed to sit on the lees and settle for a few weeks before it is bottled without fining or filtration. This is a wine of purity made with minimal intervention.
Colour: Bright clear straw.
Nose: A delicate aromatic wine. Moderate yet seductive aromatics of ripe honeydew melon, freshly baked pears, white peach, touch of spice and some white floral characters. A beautifully elegant yet strangely complex wine on the nose.
Palate: A delicate wine on the palate, medium bodied with flavoursome layers of sweet spice, baked pear and apples. A moderate level of sweetness adds a well balanced texture to this wine. A soft acidity adds a good long clean and satisfying finish leaving you gasping for more. Pure, clean and precise.
